Luke Grant is joined by Sarah Boorer, Communications professional & CWA award-winning cook, to look at the world of baked goods, delicious treats and easy recipes.

This week Sarah cooks up Luke’s Mum’s Potato Salad

Ingredients

10-12 small jacket potatoes

8 bacon rashes (cut into small squares)

3 shallots (finely sliced)

½ cup pinenuts

¾ cup mayonnaise

¾ cup sour cream

Method

Fry bacon in pan, remove from pan and cool.

Boil potatoes in saucepan of water until soft when pierced with a fork.

Remove potatoes from water and allow to cool.

Combine potatoes, shallots, bacon and pinenuts in a bowl.

Place equal parts mayonnaise and sour cream in separate bowl and stir to combine, stir cream mixture through the potatoes.
